Celebration of Sustainability Event
At a recent sustainability-themed event, the team showed exactly what's possible when catering is done mindfully. From zero-waste appetisers to homemade desserts, every dish was a showcase of just how innovative hospitality can be at LSE.
What was on the menu?
- Aubergine caviar served on a 'breakfast toast' crostini – reusing leftover bread from breakfast service.
- Cauliflower leaves with curry sauce and 'breakfast tomatoes' – reusing leftover tomatoes from breakfast and the outer leaves of cauliflowers.
- 'Wasted rice' arancini balls with herb stalk salsa verde – made from surplus rice and herb offcuts.
- Carrot peel pakora with yoghurt and mint trimmings – reusing carrot peelings with a dressing made from mint trimmings.
- Coffee grounds brownie – using used coffee grounds for a rich, nutty flavour.
- LSE honey cream tart with chocolate buzzy bees – featuring honey from the university's own beehives.
- Seasonal drinks – made using local, in-season ingredients.
